Stayed at Pony Express which is a Sun RV Resort property. Sun RV is really growing and adding resorts across the country. The last one we stayed at was in Granby.

Always have been a decent place to stay. Here’s our spot:

Met Rick and Gail Meyer for dinner at the Red Iguana, which is a lively Mexican spot specializing in Mole (their words, not mine). I had the special – fantastic! Great pick of a place Rick and Gail!

We met the Meyer’s in Myakka last year and then again this last season in Myakka. They purchased a lot in Myakka at the end of the season this year.

Next day we hung by the coach, laundry, washing the coach, organizing items, watching the Olympics, etc. We needed to make a Costco run to replenish. Then we grabbed a bite to eat at the Copper Onion.

Fantastic place where we sat at the bar! Katrina and I split the burger, the ricotta dumplings, elote, cauliflower, and bread. The burger and cauliflower were outstanding!

The picture doesn’t do it justice. In fact, the best cauliflower that we have ever had made with anchovy croutons, capers and caesar aioli.

The following day we took Bear for a hike in the Mill Creek Canyon on the Desolation Trail, located in the Wasatch-Cache National Forest.

Good thing we were there on an even day! It was stated to be a two mile hike up to the Salt Lake City Overlook.

It was more like 2.5 miles! You can see that hikers had scratched in the .5. Well worth the uphill trek:

Once we got down we crossed the street and put our feet in the cold Mill Creek. It felt so good, my toesies loved it! Bear loved playing in the water.

We got back to the Busse Bus in time to shower before Jennifer and Butch Ehlers came to visit. Keenan played soccer with their son, Michael, back in High School. It was great seeing them and catching up on life. We talked so long in the coach that we had to run out quickly to get to dinner. We ended up at BTG Wine Bar.

We found out that BTG stands for By The Glass. Great food – asparagus, salmon, and steak:

The next day Katrina and I stayed by the Busse Bus basically watching the Olympics. I did get a chance to install our new windshield wiper arm on the passenger side as the last one stripped during a rainstorm earlier on this trip. I’ll have to wait and see during the next rain travels to see if I actually installed it correctly.

We went to the Ehlers’ house and the five of us (including Madeline, their daughter) and both of our dogs headed over to the weekly food trucks in the central area of the town of Millcreek. I promised Jennifer that I wouldn’t write that she selected the food trucks, so if she asks, I didn’t include that morsel. After perusing the different offerings, we collectively decided to go to The Wasatch Brewery because they had outside seating and we could take the doggies with us. They had a speciality drink called the Smashen-weizen that I had to try. Made with Bulleit Bourbon, Fresh Blueberries, Fresh Mint, Cardamon Bitters, and Wasatch Blueberry Hefeweizen. It was very good! After I finished that, I had to try a flight:

The 1st Amendment was my favorite. I have the freedom to choose. What a great fun place!

The following day Katrina, Bear and I drove up to the Golden Spike National Historic Park. It’s the location where the Union Pacific Railroad heading west from Omaha met up with the Central Pacific Railroad that headed east from Sacramento on May 10th, 1869. Two locomotives, Central Pacifica’s Jupiter and the Union Pacific’s No. 119 pulled up facing each other with one rail left to be secured.

It was there that the final golden spike (symbolical)

was driven that connected the two rails together. Central Pacific laid 690 miles through the Sierra Nevada’s and the Union Pacific completed 1,086 miles over the Rockies. In total they had crossed 1,776 miles over rivers, deserts, and mountains that connected the east United States to the west. It took six years to complete and enabled travelers to cross our country in one week instead of six months by oxen-drawn covered wagons.

The Ehlers invited us over for a home cooked meal. They made shish-ke-bobs of steak, chicken and shrimp with veggies. Yummy! It was nice talking with them and then we watched a little of the Olympics. Their dog, Bandit, and Bear played and Bandit was very protective of her toys, but that didn’t keep Bear from “stealing” some of them when she wasn’t looking.

On Saturday Katrina and I went downtown Salt Lake City to see the Mormon complex. But, before visiting holy spaces, we stopped for lunch at the Red Rock Brewery:

I had an excellent lunch of a salmon sandwich and their brewed Kolsch. Wonderful!

We then went to the Tabernacle and we where lucky enough to hear a person practicing on the organ.

Absolutely beautiful and the acoustics were phenomenal!

The gardens around the complex were very pretty with the flowers in bloom:

Again, beautiful! The major temple is under reconstruction to shore it up for earthquakes, so we didn’t get a chance to see it up close or inside. But, here are some pictures:

Afterwards, Katrina and I did something that we haven’t done in about 1 1/2 years. We went to the movies:

Of course we saw a Disney movie based on a Disney ride!

The following day we really had a treat as Jennifer and Butch took us out on a boat to the Strawberry Reservoir.

We stopped on the shore so that the dogs could play:

What a great day on the water! It started to look Iike rain – at least it was lightening so we headed back to the boat launch and had to stop on the way cuz it was pouring. After securing the boat, we headed home on a different road that took us through Provo. There we stopped at Bridal Veil Falls:

With good intentions of seeing Butch and Jennifer again, we headed back to the Busse Bus. Mother Nature had different plans. It poured, and lightening, and hailed all around us. Due to the inclement weather, we didn’t get a chance to see them again. We really enjoyed our time in the Salt Lake City area, particularly seeing Butch and Jennifer again. Thank you so much for your hospitality and fresh veggies from the garden! We really enjoyed our time together!

The next day we packed up in the rain to head north to Idaho and hopefully out of the rain.
